Ships of the desert wait their turn in the milking parlor at the Al Ain Dairy in the UAE, the first commercial camel dairy in the world. Founded in 1981, the dairy milks around a thousand camels three times a day. According to the company, each one yields about 2.6 gallons a day, compared to the dairy’s cows, which produce around 9.5 gallons a day on about twice as much fodder. And, unlike the cows, the camels don’t need air-conditioning when the temperatures rise above 77°F. Low in fat, but high in vitamins, minerals, and antioxidants, camel milk is easier to digest than cow’s milk and is touted for its healthful properties.
