Pears across Belgium are ready for picking. On a farm near Sint-Truiden, it’s done by hand, to avoid bruising the prize Doyenné du Comice fruits. The pears can be stored in an atmosphere-controlled environment (mostly nitrogen, with very little oxygen, and a degree or two above freezing), where they will remain fresh for many months.
