A grid of floating sea cucumber pens shares Yantai Harbor with the industrial shipyard of CIMC Raffles, where deep-water oil rigs are constructed. Contrary to what the name might suggest, the sea cucumber is not a vegetable but an invertebrate animal of the echinoderm family, like the sea urchin and the starfish. It feeds on algae and various small matter on the seafloor, breaking the particles down in its digestive system and recycling them into the marine ecosystem. China has been improving food safety, but keeping pollution out of the food supply is still a problem. Yantai, Shandong Province, China.
