Main fish cleaning room of the largest tuna factory in the world, with 20,000 employees processing 600 metric tons per day. Almost all the fish processed here are skipjack and yellowfin tuna from the Western Pacific, which arrive on large-scale refrigerated ships that keep the fish at -18°C. It's sorted by size and species, then thawed, headed, gutted, and steamed. Their bodies are then scraped to remove skin and bones, and the red meat in the fish’s core.
