Following a tradition that dates back centuries, an oyster farmer harvests his crop from the mudflats of Fangyuan on the western coast of Taiwan, as his “ocean ox” waits to haul the harvest back to the village. Oyster farmers here produce around 38,600 tons of the tasty bivalves on 11 square miles of the sandy flats along the Taiwan Strait each year, although most now use motorized three-wheelers to bring in their haul. The few remaining oxen that have been trained to walk the flats have become local cultural icons, and some do double duty hauling tourists out to the oyster farms for a pleasant seafood barbecue.
