Sanquan has approximately 50% of the frozen food market in China, and this is one of the dumpling production rooms in their largest plant. Here they make wheat dumplings filled with pork & cabbage, as well as hand-finished dumplings with mushroom & chicken. Some ten years ago they had 1,000 workers making the same amount of dumpings as they do now with four hundred, but I noticed that they seemed to have at least 20-30% of their machines not producing at any given time.
The frozen food market is expanding rapidly in China, as people no longer want to make foods like dumplings by hand at home, and prefer the convenience of frozen foods instead. Common frozen foods in China include dumplings, wontons, zongzi (a rice ball with meat inside wrapped in a leaf), Chinese pancakes, and various kinds of steamed breads with and without fillings.
