The aromatic cone-shaped flowers containing lupulin glands with their desirable chemical compounds are picked in late summer, and the vines are hauled away. About thirty years ago, the Hop Research Center in Hüll, Germany, developed the high-yield Herkules variety. Today, it dominates the hop market, but older, more disease-prone varieties with different flavors and aromas command higher prices, given the booming demand for craft beers.
