Processing, added value, and speed are the focus at Taylor Farms Foodservice, whose mobile factory packs up into seventy-two trucks to follow the harvest from the Salinas Valley to the fields around Yuma, Arizona, each year. Here, workers run washing lines for spring mix salad and shredded lettuce with cabbage and carrots. The facility in this photograph burned down in 2022 and has since been rebuilt. With twenty-two production centers and twenty-four thousand employees across North America, the company is one of the largest suppliers of fresh-cut produce in the world, processing roughly a third of all salad greens consumed in US restaurants, including McDonald’s, Subway, and Chipotle among others.
