A harvesting crew for Earthbound Farm starts well before dawn to bring in a crop of organic green oak leaf lettuce near Hollister, California. Four workers walk the rows in front of the “baby greens” harvester to look for debris and scare away pests before the machine cuts the lettuce within an inch of the ground. The leaves are air-blown and trundled over screens to remove any soil before being loaded in a refrigerated truck for the ride to the packing plant. Earthbound Farm is one of the largest producers of organic salads in the United States with some 78 square miles in production, proving that organic agriculture can be done on an industrial scale. Harvesters like these can cut 10,000 pounds of salad per hour.
