Dragon fruit are native to the Pacific Coast of Central America, where it is known as pitaya, but Vietnam is its largest exporter. Farms in the Thuan province of Vietnam use LED lights in the fields to induce flowering during the dry season from October to March, allowing for three additional harvests to the ten harvests they typically get in the wet season. The area’s growers ship some 661,000 tons of the spiky fruit each year to forty countries. The 1,730-acre Hoang Hau plantation is the largest in the province, and sends most of its fruit to Europe. A so-called superfruit, dragon fruit is high in fiber, vitamin C, antioxidants, and lycopene.
