Shandong Lanxiang Senior Technical School has 20-30,000 students, and almost 5,000 of them are in their cooking school (China's largest). Students come here for 4 months to 3-year programs where they learn to cook up to 500 dishes. I was told by the dean that most students are placed in 4 and 5-star hotel restaurants. The Chinese diet has undergone a significant shift with increasing incomes, and consumers want more variety and more protein, baked goods, and dairy.
Here students are seen preparing to cook ducks in the traditional way with super heated woks.
