Endive and livestock farm of Rudy (seen in photo) and Noel Leus near Ghent, Belgium. They have 15 ha of land, and their primary income is from growing endives. They grow the endive plant in the summer and then pull the thick, carrot-like root out in the fall, and store it over the winter at -1°C. In spring they place the “carrots” in shallow trays of water stacked in the dark at 14°C to sprout white, as there is no chlorophyll in the dark.
