The Netherlands is the world leader in greenhouse horticulture, but growing crops under glass typically requires a lot of water and energy to heat and cool the buildings. Koppert Cress has been on a mission to reduce its CO2 footprint to zero by 2025, using solar and geothermal energy, as well as high-efficiency LED lighting to supplement natural light during cloudy days and winter months. The company helped pioneer high-efficiency water-cooled LEDs that generate light from the red and blue spectrum that is readily absorbed by the cresses they grow (opposite). The result is a purple light that produces highly flavored greens as well as heated water that is used to heat the greenhouse.
