Planting and harvesting lettuce in the rotating hydroponic farm of "Granpa", just west of Tokyo. The seedlings are planted in the center and the plants slowly rotate for a month before reaching the outer edge where they are harvested. Their roots are nourished by water laced with a carefully monitored diet of phosphate and other minerals. I was told that their hydroponic method results in a slightly sweeter variety of lettuce. They harvest daily, and year-round, with slightly smaller plants during the winter. The rotating hydroponic system is sheltered by a positive pressure dome of plastic held in place by netting on the outside. Workers enter via a set of doors that create an air-lock to keep positive pressure.
