Potatoes are harvested in a patchwork of fields that rotate between crops of potato, wheat, and brightly colored varieties of quinoa, which has become the new cash crop of the Peruvian Andes. There are over 4,000 varieties of potatoes grown in the Andes, providing food security through genetic diversity over a vast range of climates and altitudes, from sea level to 4,700M. One hectare of potatoes can yield two to four times the food quantity of grain crops and be up to seven times more efficient in using water than cereals.
