Chef training for some of the 5,000 culinary students in Shandong Lanxiang Senior Technical School, which has the largest cooking school in China. Students come here for up to 3 years of training to learn how to cook some 500 dishes, with many placed in 4 and 5-star hotel restaurants. The Chinese diet has undergone a significant shift with increasing incomes, and consumers want more variety and more protein, baked goods, and dairy products. Here students are seen preparing to cook ducks in the traditional method with hot woks.
