Eschewing tractors and combines for religious reasons, the Amish King family in Lancaster County, Pennsylvania, harvests organic corn silage and neighbors distribute manure on their fields the old-fashioned way, with mule teams, a single row at a time. even though they can harvest only 4 acres a day this way, the Amish make the same yields as more- modern organic farmers nearby. Farming itself is almost a religion in the county, which claims to be the most agriculturally productive non-irrigated county in the country. In an increasingly urban world, such devotion to the art and culture of agriculture attracts some seven million tourists each year to experience the food and flavor of rural life.
