Shanghai wholesale meat market gets started just after midnight, and by sunrise over 2,500 hogs have been traded and distributed throughout the city. The pork is sold and cut into halves, and many are loaded directly onto motorbikes to be delivered throughout the city, up to 10km away on this rainy morning. While consolidation has allowed China to make big improvements in food safety, many weak links remain in the system.
