Here, employees make "pesto calabrese" in 1100kg tanks with ingredients waiting to be mixed and cooked. In the large wheeled bins are the fresh ingredients: red pepper, onions, chili pepper, salt, sugar, grana padano cheese, ricotta cheese, and pecorino cheese.
